Potato & Corn Salad

Our Old San Antonio Tomatillo Salsa is our true salsa verde.

Ingredients
  • 1 Tablespoon lime juice
  • 1 Tablespoon chopped onion
  • 1 clove garlic peeled
  • 6 sprigs fresh cilantro
  • 1 16 oz. can corn
  • 6 oz. scrubbed and cubed red potatoes
  • 1/2 lb. fava beans removed from pod
  • 1 jar Fredericksburg Farms Old San Antonio Tomatillo Salsa
  • 1/3 jar Fredericksburg Farms Salsa Roja a la Charra
  • 1/2 small chopped red onion
  • 1/4 cup small head of romaine lettuce
  • salt and pepper to taste
Instructions
  1. Place Old San Antonio Tomatillo Salsa in a blender with lime juice, onion, garlic, cilantro, olive oil and salt; blend until smooth.
  2. Transfer dressing to a bowl, add salt to taste.
  3. Set aside and allow flavors to develop.
  4. Steam corn 5 to 7 minutes until tender. Remove from heat and refresh with cold water.
  5. Steam potatoes until tender. Remove from heat and toss with corn.
  6. Vring a small pot of water to boil and toss in fava beans. Boil two minutes and immediately transfer to a bowl of cold water.
  7. Pop off fava bean shells; toss beans in a bowl with potatoes, Salsa Roja a la Charra, red onion, cilantro and salt and pepper.
  8. If dressing is too thick, thin it with a couple of tablespoons of water.
  9. Toss dressing with the salad.
