Ranch Style Eggs
Salsa Roja a la Charra is a great mild salsa!

- In a medium skillet, heat 1/4 cup cooking oil.

Dip the tortillas, one at a time, in oil for a few seconds till softened but not brown.
- Remove and repeat with remaining tortillas. Keep tortillas warm.
- In the same skillet, cook the onion until tender but not brown.
- Stir in the Salsa Roja a la Charra, garlic salt and green chili peppers.
- Simmer, uncovered, for 10 minutes.
- Break the eggs into mixture, taking care not to break the egg yolks.
- Season to taste.
- Cover skillet and continue to simmer the eggs until done to your preference.
- Place some of the huevos on a tortilla and top each serving with a small amount of shredded cheese.
